Szechuan Green Beans with Scallions

1 pound green beans, ends trimmed
5 tablespoons soy sauce
2 tablespoons sesame oil
1 tablespoon cider vinegar
1 tablespoon red wine
2 tablespoons sugar
2 tablespoons olive oil
1 small onion, minced
3 garlic cloves, minced
3 teaspoons fresh ginger, minced
5 tablespoons scallions, minced
2 teaspoons red pepper flakes

Steam green beans for 5-minutes. Rinse with cold water and drain.

Combine soy sauce, sesame oil, vinegar, wine, and sugar in a small bowl. Heat oil in large skillet and stir-fry beans for 1 minute. Set beans aside on a platter.

Reheat oil and add onion, garlic, ginger, scallions, and red pepper flakes and stir-fry for 30 seconds. Return beans to skillet and fry for an additional minute. Add sauce and coat beans well.

Serve immediately.

Serves 4 as a side dish.
