Spinach Pear & Pecan Salad

Combine:
1 bunch fresh spinach
1 thinly sliced pear
1/2 thinly sliced small red onion
1/2 cup toasted chopped pecans
1/4 cup crumbled blue cheese.

Whisk together:
1/2 teaspoon Dijon mustard
1 tablespoon lemon juice
1 1/2 tablespoons balsamic vinegar
1/4 cup olive oil
Salt and pepper, to taste

Drizzle dressing over spinach mixture and toss gently.

Serves 3.
