1 package puff pastry (store bought)
1 cup fresh spinach, finely chopped
1 cup ricotta cheese
1/2 cup goat cheese or feta cheese
1 egg, beaten
salt and pepper to taste
Preheat the oven according to the puff pastry package directions. Cut the pastry into 12 even squares. Lightly spray a muffin tin with non-stick cooking spray. In a medium bowl, mix together spinach, cheeses, egg, salt and pepper until well combined. Place the pastry squares into the muffin tin to fit the mold. Fill each mold with a large spoonful of the spinach mixture. Bake in the oven according to the direction on the puff pastry package.
Makes 12 pieces.
