1 1/2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
4 cups chopped, clean fresh spinach
3 tablespoons lemon juice
4 cups cooked long grain rice
1/2 tablespoon minced fresh basil
Salt and pepper, to taste
1/4 cup crumbled feta cheese
In a skillet, add oil, onion and garlic; cook over medium-high heat 5 minutes. Add spinach, lemon juice and rice. Cook stirring frequently, until spinach is limp and rice is thoroughly heated. Toss with basil. Add salt and pepper, to taste. Add crumbled feta before serving.
