¼ cup white vinegar
1 tablespoon sugar
¼ teaspoon anise seed (crushed)
1 ½ tablespoon fresh chives
¼ cup fresh lemon juice
1 teaspoon orange rind (grated fresh)
½ pound beets, peeled and grated fine
Salt and pepper to taste
Mix vinegar, lemon juice, sugar, orange rind, and anise seed together. Add the beets and chives and mix well. Salt and pepper to taste. Chill at least 1 hour or overnight.
Makes 2 to 2 ½ cups of relish.
