Also known as Pak Choi, these delicate greens are part of the cabbage family. Typically used in Asian dishes, bok choi and tatsoi have surprising versatility outside of simply stir frying!
As with most greens, bok choi and tatsoi should be used as quickly as possible, but will store up to a week in a damp towel in the refrigerator.
Wash bok choi/ tatsoi in cold water before using. While they can be used both raw and cooked, bok choi and tatsoi are typically used in a stir-fry. Be sure to saute the stems separately from the greens, as the greens cook much faster. They can also be sliced in half and grilled, or added raw to an asian-style salad.
