Quick Roasted Broccoli And Garlic

This speedy recipe is a favorite of CSA member Carlotta Caracci, thanks for sharing!
1 head broccoli, washed and roughly chopped
3 tablespoons olive oil, separated
1/2 teaspoon sea salt
crushed red pepper to taste
1/2 teaspoon coriander
1 clove garlic, chopped
1/4 cup Parmesan cheese
To one head of broccoli, toss with 2 tablespoons olive oil, sea salt, crushed red pepper, coriander, and clove of chopped garlic.  Roast in oven at 400 degrees for 15 minutes, turning once half way through.  After removing from oven, I then toss with the additional tablespoon of olive oil and Parmesan cheese.
Serves 4 as a side dish.
