“Kids Corner” Carrot Cake Bars

1 1/2 cups flour
1 1/2 teaspoons cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
2 large eggs
1/2 cup firmly packed brown sugar
1/3 cup vegetable oil
2 cups shredded carrots
1 8-ounce can crushed pineapple, drained

Topping:
1 cup whipped cream cheese
2 tablespoons confectioner’s sugar
Grated carrots (optional)

Heat oven to 350 degrees F. Grease a 13 x 9-inch baking pan. Combine flour, cinnamon, baking powder, salt and nutmeg; set aside. In a large bowl, whisk together eggs, brown sugar and oil until well blended. Stir in carrots, pineapple and flour mixture until just combined. Spread batter evenly in pan. Bake until top is set and edges pull away from pan, about 25 minutes. Cool completely. Blend cream cheese and sugar until creamy. Spoon a bit onto each bar and top with grated carrots.

Makes 12 bars.
