Beets In Orange Sauce

2 large beets, trimmed
1/2 cup orange juice
1 tablespoons sugar
1 tablespoons butter
1 1/2 teaspoons orange zest, minced
1 teaspoons red wine vinegar

Preheat oven to 400F. Wrap beets together in foil, Place on baking sheet, and bake about 1 hour 15 minutes until tender. Cool and peel beets; cut into 8 wedges. Combine beets and remaining ingredients in medium non-aluminum saucepan. Simmer over medium heat until sauce is syrupy, stirring often, about 8 minutes. Season with salt and pepper.

Serves 2.
