Beet Smoothie

Thanks to friend of the farm, Anna Stange for sharing this recipe. Anna says: “This recipe is totally based on whatever I have available at the time…Seriously, I just open the cupboard, fridge and freezer and throw in whatever I have on hand. This includes frozen kale (makes an excellent smoothie). The rice milk or yogurt, water, etc. is included to make it more runny and drinkable.”
1/2 pint boiled and peeled beets including juices
1 to 2 cups fresh or frozen raspberries (or other desired fruit)
1 cup yogurt, rice milk, ice cream, water, or ice cubes (all optional)
1 tablespoons honey
Put it all together in the blender. Adjust ingredients to attain the desired consistency.
(Also good as a frozen blender drink with vodka mixed in!)
